• 4 slices bacon, diced
  • 1 red onion, sliced
  • 2 sweet potatoes cut into small dice
  • About ½ cup chicken stock
  • ½ cup green beans cut into 1/2 inch segments
  • ½cup dates, chopped
  • ½ cup pecans, chopped
  • 1 T. fresh thyme, chopped

Saute the bacon in a pan over high heat. Add onions and saute until bacon is crispy and onions are caramelized. Add the sweet potatoes and chicken stock, and cook until sweet potatoes are softened, and stock has reduced. Add green beans, and cook for just a few minutes until al dente. Stir in dates, pecans, and fresh thyme. Season with salt and pepper.
